Description
Join us for a hands-on workshop with Caldera Cacao Roasters, where you'll learn about and do every step required to make dark chocolate from raw cacao beans. In this craft chocolate experience, you'll participate in each stage: sorting, roasting, winnowing, stone grinding, tempering, pouring and tasting! You'll start a batch of chocolate during the class, and once it has finished stone grinding, it will be ready for pickup four days later. Come prepared to work—participants will do as much of the chocolate-making as possible!
Participants must be able to stand and walk for 20-30 minutes in a climate-controlled facility. Please wear comfortable, closed-toe shoes and clothing that can be stained if a spill occurs. Hairnets and aprons will be provided for the chocolate-making course.
This program is limited to 8 participants.

Logan Burgess
Logan Burgess operates Caldera Cacao Roasters, a bean-to-bar chocolate factory, with his wife, Lauren, in Bozeman. Bean-to-bar means they do all the steps to take raw cacao beans and make dark chocolate. Logan graduated from MSU with a business degree focused on finance in 2011 and worked as a financial writer before starting the chocolate company. Logan and Lauren spent time living and traveling in Central and South America, focusing on buying fair-trade cacao from Ecuador, Guatemala and Peru.Date | Day | Time | Location |
